Berbere – The Heartbeat of Ethiopian Flavor
Berbere is more than a spice — it is the soul of Ethiopian cuisine. Bold, fiery, and deeply layered, this brick-red blend is the foundation of doro wot, misir wot, tibs, and silsi. It goes in early, cooked long and low into butter and onions until the raw edge softens and the color deepens into something rich and serious.
How to use it
Bloom berbere in niter kibbeh or oil with onions and garlic before anything else goes in the pot. It needs heat and fat to open up. From there: doro wot, misir wot, key wot, tibs, roasted vegetables, marinades.
